
Pak Choi With Oyster Mushrooms
- Prep time: Steaming setup or a regular pan with its lid
- Cook time: about 25 minutes
Ingredients
Soy Sauce:
- 100ml water
- 2 tsp soy sauce
- A small squizz of Honey
- A small amount of ground black pepper (to your preferences)
Thickening (optional):
- 1 tbsp cornstarch
- 2 tbsp water
Stir-Fry:
- Baby pak choi (or bok choy)
- Pinch of salt
- Olive oil
- 500g Oyster Mushrooms, handcut to your preference
- 1 tomato cut to small pieces
- ½ Spring Onion
- ½ Onion + 1x garlic
- ½ red pepper
- A small squizz of ginger paste (or fresh if preferred)
Method
Prep & cut the pak choi down to your preferred size.
Optional: keep the outer leaves intact, and cut the heart in half.
Cook with steam and set aside. Remove the excess of water.
Prep & cut the oyster mushrooms.
Add olive oil to the frying pan, then add the mushrooms.
Fry them a bit then push them on one side of the pan to add the stir fry mix.
Fry them separately for a few seconds.
Mix and keep frying everything in this one pan.
Add the pak choi back to the pan, mix and keep frying.
After a few minutes, add the soy sauce and thickening mix (optional) to the mix and keep cooking for a few minutes longer.
When ready, serve and enjoy!
Optional: add any spice to this mix.
