Oyster Mushroom Rice & Avocado Dinner

Ingredients

  • 200g mix of broccoli & Cauliflower
  • 100g Rice
  • 160g Sweet corn
  • As much Oyster Mushroom as desired
  • Half an Onion
  • 2 cloves of Garlic
  • 2 Eggs
  • 1 Avocado
  • Rice vinegar
  • Some Dill
  • Spreadable Butter

Method

Cut & prep your onion, garlic, and add corn to the mix.

Start frying them with oil.

In the meantime, start cooking your rice following its instructions.

Wash and separate broccoli and cauliflower into thin pieces, place them on the air fryer tray.

Advised cooking time: 180C celsius for 15 min

Once you are happy with your fried mix, add Oyster mushrooms to the pan.

Add your butter of choice to the mix and keep frying.

Start scrambling your eggs. Or fried if preferred.

Once happy with your cooking, start assembling.

Add your fresh avocado to the side of the plate.
