
Jacket Potato Loaded With Spinach & Oyster Mushrooms
- Prep time: Use of an Air Fryer or conventional oven
- Cook time: 30 minutes (Air Fryer) to 1 hour (Conventional Oven)
Ingredients
- 3-4 jacket potatoes (frozen or raw)
- As much Oyster Mushroom as desired
- Handful of Spinach
- 1/4 an Onion
- 1 clove of Garlic
- 200ml plant-based milk
- Half a spoon of cornstarch
- Vegan cheese (no wrong answers!)
- Olive Oil
- Some Chives if wanted
- Spreadable Butter
Method
Wash and prep your jacket potatoes. If using raw potatoes, massage them with oil before putting them in a heat source. Follow cooking instructions, but Air Fryer should take less longer than an oven - no preheating required.
Hand cut Oyster Mushrooms to the desired size.
Start frying your Oyster Mushrooms with oil.
Mid-cooking, add spinach to the mushroom pan.
Again, mid-cooking, add your freshly cut onion and garlic.
Add salt and any other desired spices to the mix.
To thicken the mix, whisk cornstarch to your plant-based milk, then add the mixture into the frying pan. This will help binds the ingredients together.
Once fully cooked, break open your jacket potatoes.
Add spreadable butter inside, and add your favourite grated cheese as well (as much as you want, no wrong answers!)
Add the mushroom mix inside the potatoes.
Serve and enjoy! :)
